(KR101659654) The present invention relates to a manufacturing method of a multilayered nano-capsule in which unsaturated fatty acids and cinnamon oil are encapsulated; and to a multilayered nano-capsule manufactured by the method.  The manufacturing method comprises the steps of: (a) mixing unsaturated fatty acids and cinnamon oil to obtain a mixture, adding the mixture to an emulsifier, homogenizing the mixture and the emulsifier at a velocity of 900-15,000 rpm for 1-5 minutes to obtain a homogenized product, and passing the homogenized product in a micro-fluidizer at a pressure of 100-150 MPa once to three times to form a nano-emulsion; (b) adding the nano-emulsion formed in step (a) to a cationic biopolymer solution and homogenizing the nano-emulsion and the cationic biopolymer solution to form a first film on the nano-emulsion; and (c) adding the nano-emulsion coated with the first film in step (b) to an anionic biopolymer solution and homogenizing the nano-emulsion and the anionic biopolymer solution to form a second film.  The multilayered nano-capsule, in which unsaturated fatty acids and cinnamon oil are encapsulated, is manufactured by the manufacturing method of the present invention can solve distaste while a user takes the multilayered nano-capsule by reducing the bad smell and taste of unsaturated fatty acids and show storability against an external environment such as pH, temperature, time, light, oxidation, etc.  Also, an antibacterial ingredient, an antioxidative ingredient, a dietary fiber, etc. contained in both a natural polymer and cinnamon oil are transferred to the multilayered nano-capsule so the multilayered nano-capsule can be used even for medical and cosmetic industries as well as a functional food.
